We are happy to send this testimonial on behalf of all of us at Fresh Bistro. This all began with a conversation at the Flying Star near Corrales. We had a dream of serving Fine, Fresh, Food in a charming, comfortable, and memorable setting - a 40-foot rolling bistro. We spent a lot of time with you and others (George Kenefic) from STEPS drafting our plan, we must have done 4-5 drafts. We used our, funds, friends' and money from The Loan Fund to buy the retired Channel 4 news bus, fixed it up to look like "The Orient Express" decor as our guide. It seats 12 and we take our customer diners on a fantasy voyage and destination of their choice. 

We recently extended beyond our dream to lease about an acre of property on 4th St. with potential for our fantasy restaurant, rolling Bistro, a "Pub" to be, outside covered entertainment area, and a commercial kitchen is in the works, a grand garden and lots of off street parking. We have 5-8 employees depending how many things we have going on. 

We are going to use our garden to teach local, grammar school children about "Fresh" dining and how vegetables play an important role. When the garden is producing we plan to buy them for our mini-gardeners. 

We work, very hard, always have, and we are living our dream thanks to STEPS and Albuquerque!

Foundations 4 Success moved from Brooklyn, NY to Albuquerque two years ago.  We met John via 1 million cups and pitched our idea at a STEPS Board Meeting.  Since then, our relationship has been that of mentor/friend/resource connector.

John Moore not only understood our idea, concept, and goals but suggested a name for our campaign - STEM is Childs Play - which is what we ran with.  It continues to be a success!

Through John's guidance, we have grown immensely, partnering with UNM, Sandia Labs, Community for Learning, as well as numerous APS and charter schools.

STEPS  has played an instrumental part in growing our business and John has been a great inspiration for us.  We consider him a partner/adviser and would not be where we are without him.

    We have created the World’s First Healthy Cupcake right here in Albuquerque, NM. Our CuppyCakes are low calorie, low carb, no added sugar, naturally gluten-free, and no artificial ingredients. We offer a two unique perspectives regarding the world of fitness and nutrition. Cami Jones, Co-Owner, has her Bachelor’s of Science in Nutrition and Dietetics and is pursing her Master’s in Food Science. Alexis Dowling, Co-Owner, has lost 70 lbs doing nutrition with Cami. We’ve been friends for about 15 years and are both internationally ranked powerlifters. We are extremely passionate about real, whole food and believe that Albuquerque needs a place to get healthy meals. Our plan is to open a truly healthy fast food restaurant which will offer healthy meals on-the-go and, of course, CuppyCakes. We plan to open Spring 2015 and look forward to working more with Steps as our business grows.

    After 13 years running corporate restaurants I broke away and began the process of opening my own food truck. With the overwhelming amount of tape to get though legally as well as the interpretation of a very outdated zoning law, John and the team at STEPS are invaluable. When your dream is on the line, seek the knowledge of the people that have been there and done that, and want to see local entrepreneurs succeed.     The S’wich It Up team first starting working with STEPS in March of 2013, when we were just planning our business. Now that we have launched our gourmet peanut butter and jelly food truck, STEPS has been invaluable in helping us connect with members of the community who welcome and appreciate food trucks.     In 2010 I discovered STEPS when I was trying to bring an awareness of the food truck industry to Albuquerque. I was introduced to the STEPS program and became a volunteer Marketing and Advertising Coordinator for the program. During my involvement we were able to break the ice with the city of Albuquerque and established Curbside Cuisine – a destination for food trucks in the International District. We helped the trucks with all the legalities of doing business and the skills to compete in the marketplace. I have recently been reunited with STEPS and John Moore. I look forward to providing low cost, professional, advertising and marketing assistance to any STEPS participants. I feel that a professional business image is a great part of becoming successful in today’s competitive market and I’m here to help.

    New Mexico ART (Active Recovery Techniques) is an out patient wellness center for mental health and substance abuse and we are proud to say that we have been in business for 8 months and we couldn’t have done it with out the support, guidance, and encouragement that STEPS provided to us.
